Add aquafaba, lemon juice, salt, and garlic to any tall container with a smaller diameter that you have on hand.I usually make mine in the cylindrical container that typically comes with the stick mixer, but have also had success using a small pyrex jug before.
Use the stick mixer on medium speed to combine ingredients until mixture becomes frothy.
Slowly begin pouring the oil into this mixture with the stick mixer continuously running on med-high speed.
Continue to blend mixture with stick mixer until all the oil is combined and mayonnaise has thickened.
Keep covered in the fridge for up to a week.
