Aquafaba Mayonnaise

Equipment

  • Stick mixer

What You Need

  • 3 tbsp aquafaba (chickpea brine)
  • 1 tsp lemon juice
  • 1/2 tsp salt
  • 1/2 clove garlic crushed
  • 125 ml neutral oil e.g. canola or vegetable oil

Instructions

  • Add aquafaba, lemon juice, salt, and garlic to any tall container with a smaller diameter that you have on hand.
    I usually make mine in the cylindrical container that typically comes with the stick mixer, but have also had success using a small pyrex jug before.
  • Use the stick mixer on medium speed to combine ingredients until mixture becomes frothy.
  • Slowly begin pouring the oil into this mixture with the stick mixer continuously running on med-high speed.
  • Continue to blend mixture with stick mixer until all the oil is combined and mayonnaise has thickened.
  • Keep covered in the fridge for up to a week.
